On September 27, the Technical Day organized by Antim took place at the Hotel Fuori Le Mura in Altamura (Bari), under the theme “Premium Semolinas and Exceptional Pasta: The Supply Chain that Feeds the World.” The event offered participants an opportunity to stay updated on key topics related to the production of high-quality semolinas, pasta-making, sustainability, and technological innovation in the industry.

President Lorenzo Cavalli emphasized: “This Technical Day is a valuable occasion for discussion and deeper insight into strategic issues for the semolina and quality pasta supply chain. The sector is undergoing rapid changes driven by technological innovation, sustainability, and new market dynamics. Events like this allow us to reflect together on how to face future challenges, leveraging expertise, tradition, and our capacity to innovate. Collaboration between companies, technicians, and professionals is key to continued growth and to delivering products of excellence.”

Speaking on behalf of OCRIM, Marco Galli, Director of the Technological Department, presented on semolina production in a dynamic market. A central theme of his presentation was clear: having efficient equipment is no longer enough—real flexibility is required to quickly adapt both to the varying characteristics of raw materials and to the specific demands of customers.

In this context, wheat blending takes on a strategic role. Traditionally based on fixed percentages, this practice risks transferring the natural variability of wheat batches to the final product, potentially affecting semolina quality. To address this, OCRIM has developed the QTM (Quality Target Mixing) system, a major step forward in blending technology. By using sensors to monitor the protein content of the mix in real time, the system automatically adjusts the dosing of each wheat type. This ensures consistent quality, optimizes operating costs, and minimizes the risk of unwanted variations in the final product.

Flexibility was also discussed in relation to milling diagrams, grain size management, and regrinding systems, where process automation and integration have become essential tools for taking advantage of increasingly specialized and evolving markets.
