How does the amount of water affect the methods for analysing the flour? How should moisture at the milling plant be managed? These are just some of the questions which the speakers at the Antim Technical Day, held in Cremona on the 25th of September, attempted to answer. In the afternoon, a guided tour of the Milling Hub rounded off the day\u2019s events. (On cover: Lorenzo Cavalli, President of ANTIM)<\/em><\/p>\n\n\n\n<!--more-->\n\n\n\n<p><\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignleft size-large is-resized\"><a href=\"https:\/\/www.ocrim.com\/app\/uploads\/2021\/10\/Platea.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.ocrim.com\/app\/uploads\/2021\/10\/Platea-1024x682.jpg\" alt=\"\" class=\"wp-image-2546\" width=\"320\" height=\"213\"\/><\/a><\/figure><\/div>\n\n\n\n<p><strong><em>Cremona <\/em><\/strong>&#8211; Water was the central theme of the <em><strong>Technical Day held by Antim<\/strong><\/em> (<strong><em>National Association of Italian Milling Industry Technicians<\/em><\/strong>) on the <strong>25th of September<\/strong> in Ocrim&#8217;s hometown and attended by a significant number of associates. &#8220;<em>Water: <strong>pros and cons in the mill<\/strong><\/em>&#8221; was held in the conference room of the <strong><em>Cremona Palace Hotel<\/em><\/strong>, followed by a guided tour of the <em><strong>Milling Hub<\/strong><\/em> plant.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignright size-large is-resized\"><a href=\"https:\/\/www.ocrim.com\/app\/uploads\/2021\/09\/Relatori.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.ocrim.com\/app\/uploads\/2021\/09\/Relatori-1024x1024.jpg\" alt=\"\" class=\"wp-image-2525\" width=\"328\" height=\"328\"\/><\/a><\/figure><\/div>\n\n\n\n<p>After a welcome by <em><strong>Lorenzo Cavalli<\/strong><\/em>, <em>Antim<\/em> president, <em><strong>Marco Galli<\/strong><\/em>, the director of the technology department of Ocrim, gave the first talk. The director talked about the various <strong>roles <\/strong>that water plays at the mill. The aim is to <strong>manage <\/strong>the quantity of water to be added as well as the time taken to mill the grain, since excessive water and longer periods can cause higher loads of bacteria and moulds which affect the finished product. <em>Marco Galli<\/em> presented some <strong>solutions <\/strong>that Ocrim has developed and is developing to address these issues. The floor was then passed to <strong><em>Maurizio Monti<\/em><\/strong>, former chairman of <em>Antim <\/em>and expert in milling techniques, who talked on the subject of &#8220;<em>Water <strong>absorption<\/strong>, mould in flour, constant <strong>hydration <\/strong>and adapted hydration in laboratory analysis<\/em>&#8220;. <\/p>\n\n\n\n<p>During his talk he emphasised how downtime caused by the improper management of water can have <strong>serious repercussions <\/strong>for the entire plant. One solution can be proper and consistent <strong>cleaning <\/strong>of the components and a focus on the type of flour to be produced.&nbsp;The next speaker was engineer <strong><em>Antonia Matarese<\/em><\/strong>, building engineer at <em><strong>PI-SA Srl<\/strong><\/em>, who, during her speech entitled &#8220;<em>Mills and water: <strong>critical issues<\/strong> and <strong>solutions<\/strong><\/em>&#8220;, reviewed coatings for <strong>treating <\/strong>the internal and external parts of the conditioning and storage bins, as well as the most suitable sandblasting and hydro-sandblasting methods for <strong>overcoming the issues<\/strong> caused by water in milling plants. <\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignleft size-large is-resized\"><a href=\"https:\/\/www.ocrim.com\/app\/uploads\/2021\/09\/Visita-Milling-Hub.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.ocrim.com\/app\/uploads\/2021\/09\/Visita-Milling-Hub-1024x576.jpg\" alt=\"\" class=\"wp-image-2524\" width=\"351\" height=\"197\"\/><\/a><\/figure><\/div>\n\n\n\n<p>The final talk was given by <em><strong>Stefano Mazzini<\/strong><\/em>, the Ocrim commercial director, who presented the futuristic <em>Milling Hub<\/em> plant which people could see on a <strong>guided visit <\/strong>in the afternoon. Trade operators were therefore given the opportunity to visit the recent plant owned by Ocrim and <strong><em>Bonifiche Ferraresi<\/em><\/strong>.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignright size-large is-resized\"><a href=\"https:\/\/www.ocrim.com\/app\/uploads\/2021\/09\/Antolini-e-Cavalli-min-scaled-1.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.ocrim.com\/app\/uploads\/2021\/09\/Antolini-e-Cavalli-min-scaled-1-682x1024.jpg\" alt=\"\" class=\"wp-image-4417\" width=\"250\" height=\"375\"\/><\/a><\/figure><\/div>\n\n\n\n<p>Also present at the event was <em><strong>Sergio Antolini<\/strong><\/em>, Ocrim president, who received a <strong>plaque in recognition<\/strong> for the hospitality offered on behalf of the top management of the <em>Milling Hub<\/em>. The chairman also told the press office of the local newspapers <em>&#8220;The<strong> second plant <\/strong>is being set up and there will eventually be <strong>10 plants<\/strong> in total. This plant can produce <strong>150 tons per day<\/strong> (&#8230;) There are two very important directors: my brother Alberto <strong>Antolini<\/strong>, and <strong>Federico Vecchioni<\/strong> of Bonifiche Ferraresi.
